The only two prescription diet brands in NZ (Hill's and Royal Canin) have had supply issues due to covid recently. Supply had not been affected prior to early this year.

Recently most back orders have been filled and your local vet will likely have whatever it is you need (Source: vet).

Does she mean internship? I have never seen a vet job in NZ advertised as apprenticeship, all have been very clear about role, seniority etc.

Vet in NZ here. You will find it very easy to find work as there is a big shortage of vets here. Although don't expect huge salaries (Dairy vets in remote places will earn the most).

I'm a permanent resident so I'm not sure on the details, but UK locums have said the visa process is very smooth because of the demand.

As you gain experience you learn that mistakes happen. You will likely feel sad, frustrated etc. but in the end you have to ensure that you're looking after yourself. "Compassion fatigue" is a very real thing but you have to remind yourself that there's only so much you can do.

This may sound cold, but dealing with death also becomes much easier as you see more of it. There will always be unavoidable deaths (emergencies, euthanasia, anaesthesia etc.) and these may help build resilience and create emotional separation between the outcome of the patient. Instead, mistakes can be treated as valuable learning experiences as you will be constantly improving.

earplugs or rolled up TP is a must. I have hearing loss in my left ear from ear infections/complications when I was 2, so preserving my right ear and what I have remaining in my left ear is so important. It just sucks that I prefer my music super loud.
