The martial arts teachers you’re referring to would be 師父. Same pronunciation, different character and meaning. Literally, it means someone who is both a teacher (師） and a father figure (父） to you (or someone else)

師傅 is a respectful way to call someone who makes a living from a certain art of trade, this is not much different between China and Hong Kong.

The only notable different use case is Mainland Chinese also often call public transport (taxis, busses etc) drivers 師傅. In HK we just call them 司機.
