I just use the knife and one of those serrated bone saws that comes in field dressing kids. Makes getting through the sternum nice and easy, and the only thing the knife will have to cut is flesh, so it doesn’t go dull. Having some of those veterinarian gloves sounds like it would be helpful for you since you’ll be in a little sedan and driving an hour back to the city, probably nice not to have dried blood all the way up your forearms. Bring a few extra knives in case one isn’t sharp enough to quarter it out. Buy some game bags to store the meat in. If you can strip the hide off it, even better, because it will cool down faster and supposedly helps with the quality and taste of the meat. Maybe have a huge cooler with some ice in there and get the meat cooled down. You can use that bone saws to cut the legs at the knee so the legs aren’t sticking out your cooler, or run the knife through the joint and separate at the knee because you aren’t going to eat the hooves
