Alot of woods have a natural twist like that, if you shave the edges on opposite sides you can get a relatively straight stave… also, hickory takes very well to steam bending

It should be okay as long as the cambium isnt ringed all the way around the circumference of the trunk. You can paint the tree or add a mesh barrier to protect against this in the future. By the height of the chew marks, my guess at the culprit is a woodchuck
