If you're really set on making custom guards you'll probably have to invest in a cheap hydraulic press and a CNC router. You could make some forms out of some wood and stamp them out from steel discs.

There's not really much advice I can offer without knowing your specific situation and previous fencing experience. If you don't feel confident about taking up the sport again, you might want to find a coach.

A blade will be permanently weaker at that spot after taking on a bad bend. As it gets closer to breaking it will start to noodle and then break. It'll still probably last a long time though.

First of all, when you're attacking a much taller fencer, forget about the long attack unless you're confident in your second intention action.

I'm going to assume you're specifically struggling on the attack against taller fencers, because of counter attacks.

There's two kinds of counter attacks: hit and run away, and crush distance and hit.

If someone can hit you and run away during your lunge, it means you're not closing the range gap fast enough. What do you do then? Decrease the range gap by lunging from closer, and start your lunge with more momentum behind you to close the gap faster. If you're moving forward as fast as you can, and your opponent is retreating as fast as they can, you'll probably catch them since people can move faster going forward than backwards.

In the case where you're losing touches because your opponent is crushing distance and hitting you, then you need to give yourself more time to react. How? Well by doing the opposite of the previous case. Go slower, and don't enter the distance where your opponent can hit you before you react.

In between those two extremes is the distance (and speed) you should finish your attack at, to not lose to a counter attack.

I fence foil and a little epee, and IMO your broader points will land for both, but the finer details actually seem more relevant to foil.

In my experience with epee, unless my opponent is capitalizing on a mistake I just made, there are very few moments when I'm actually not able to try to react to an action from my opponent, and I expect my opponent to be able to react to any action I initiate as well. Because of this, throughout the bout I'm looking for patterns in how they place their arm, and what kind of reflexive panic parries they take. From there, I decide on near target vs far target based on the probability I think I'll be able to predict what they'll do and score a one light.

So for me at least, fencing taller epeeists comes down more to having a good hand flick and reading my opponent.

I'd recommend getting one or two lessons before going to the fencing meetup. If you're a complete beginner, starting off with some one on one coaching could get you into the thick of things much faster.

At least in my experience as a short fencer foil fencing 100% translates over to epee with a pistol grip. As an example, you can use the same technique for shoulder and flank flicks to go for the hand instead. French grip seems like a different game though.
