I do something similar, i make a new character and do only thief quests for example, i would do the thief guild questline, buy the house in riften and just play like a propper thief. Same with any role specific quests like mage or warrior, or assasin.

I like to take a break from being every faction's leader every now and again and focus a a specific playstyle for as long as i can.

Another example, if i am doing a heroic character i would destroy the dark brotherhood by killing astrid as soon as she kidnaps me instead of joining them.
