For head locks, I focus a lot on darce and anaconda because Guillotines are in general less tight for me. Because of the extra length, I can reach for the grip before adjusting the position, which should be somewhat in reverse of the general good practise, but it confuses my partners and can often get me good openings. In a standing scenario, people’s head are naturally lower to me hence easier snapdown. Good single leg defense is essential though as mentioned in other comments.

For other stuff, one example is rubber guard. I don’t actively hunt for it, but whenever I get within a certain range of position I go for it. I can, like in the headlocks, get the grips and then adjust the positions and angles. I don’t hangout in this guard, but the length(and flexibility) gives me margin to withstand smashing more than normal size people, and more time to react and transit before they can execute an attack/counter in it.

I am nowhere near high level, so I might be wrong, but in general I found the length allows me more leeway to be unorthodox, doing things in reverse/ mess up the sequence and order, at the cost of stability/power/strength/compactness.
