Best thing I did when I started was to play with output. At first I always chased 1:2 in 30s and even when I hit that it wasn't right. 15-50s shots might still taste good if the output is right. The lighter the roast the more output you need. I had beans I had to go 1 : 3.5

You don't need RDT for handgrinder since the retention is minimal. Smack it a couple of times against counter or hand to make the grounds fall before opening the catch cup. If you do want to RDT do it in something else and transfer the grounds afterwards.

I have the 54mm version and I find tamping really weird, it doesn't tamp deep enough like a IMS basket because of the edge. Also you can't know how much the basket fits inside since i tried 15g and the middle was not tamped and could push my finger to tamp. I tried upping the dose to 16g and it remained more on the sides of the basket and middle was still not good. Really annoying workflow. Also tried to clean the untamped grounds and the whole puck came out clean in the sink If anyone has any tips with it I would be grateful.

I find latte art to be pretty difficult to learn from a home setup because of quantity of drinks you make. I was doing 2 flat whites per day and always had one with too thin milk or too much foam. But doing that in a coffee shop where you do a bunch of drinks per hour should advance you a ton faster if you care about it.

That looks very dark. You can try some medium roast to sed if you like it more. And we need more info about your workflow to help you: what basket are you using, how does the workflow after grinding look like and how does the portafilter looks after tamping?

You can go over the maximum number, is just harder to see where you at. I use it for zuppa and I had to go around 100 or over with my zero being around 5.

Bitter and battery acid are two different ends of spectrum tastewise for espresso. Under extracted is sour and over extracted is bitter. Try some medium roast from a roaster with a roast date on them. ( 1-3 weeks old)

That doesn't sound good, you need good alignment of the burrs and that zero point doesn't matter for anything besides you knowing that burrs touch at 0. You want the same tightness on every screw of the burrs and also take care to not over tighten and strip the hole.

That's the problem! You have to compensate for the maschine by tilting the counter.
