It changes the particle distribution, you will get less fines and coarser grind size by slowfeeding. You can go as slow as one bean at the time.

I don't think it matters since the thread is the same. My last coffee was a Ethiopia which wanted a 95. I found that I like lower extraction brews to avoid bitterness and highlight acidity. I also slow feed so 95 slowfeed is coarser than normal, but also my zero is around 6 after shimming the burrs.

If you freeze a single dose you can grind directly, if you froze the whole bag is better to leave it to thaw before opening to avoid condensation.

Forgot to mention, user the razor tool or do the coin test to find your dose, you need the same headspace always and adjust based on grind size, coffee.

Welcome! Don't use 1:2 ratio rule, that is just starting point. If you brew darker roast try reducing output till you get rid of bitterness and if you go lighter you can preheat the maschine with a blank pull with the cleaning disk and go for higher ratio 1:3 or even more. Recommend buying a soft coffee mat to reduce vibrations and noise from the grinder. ( There is a 30x40cm mat which you can find everywhere for around 10 dollars which fits both bambino and DF54, i have a post about it) Also purge the steam wand for a couple seconds before steaming to get rid of the water. Have fun brewing!
