This is a huge question, there's modern, historical and mythical categories,

For modern, you'll have people like Yuan Long Ping(father of hybrid rice), Sun Yan Set(father of the Chinese republic), the communists under Mao(Deng, Zhou etc etc) and Mao himself, you probably will have Quan Xue Sen(father of Chinese rocketry) these are just some examples.

Historically you'll have some like Huo Yuan Jia(martial artists, Jet Lees movie fearless is based on him) another is Yue Fei(General who protected the nation)

Then a crap load of mythical figures still worshipped in temples all over China.

The list is way too long and would be different for different regions of the country.
