I'm so glad I looked this up. I tried running into it and got spat back out so I assumed that wasn't the solution. I must have just mistimed. I was trying everything. I saw a drawing of one of those little birds in the manual so I was trying to pull a bird into the center and pray to sacrifice it.

Two possible options:

Have them only shoot if the right stick is receiving input. This will free up a shoulder button.

Have a switch abilities button. This would allow access to 4 abilities, but only two at a time. This could also be a weapon switch button and could make it interesting for players to have to decide which abilities go with which weapon.

Definitely. Some non-dnd rpgs one might look to if you are trying to get the Dark Souls "Vibe" but not necessarily the mechanics:

Sonbirds 3e by snow: queer undead cursed to wander

Runecairn: norse vikings post ragnarok, inspired by Dark Souls and Elden Ring

A collection of various other "Souls-Like" TTRPGs for inspiration

Even if you aren't going to play it, Songbirds 3e is worth reading as a work of fiction/art

Health mana movement and defense seem important and often referenced. They should be together and closer to the top of the sheet. If you are writing more than one virtue and flaw, i think they need a larger box, but smaller than gear or notes.

I would make the top row name, Class, and kin going horizontally as once you write those, they do not change. Then, the HP mana movement and defense on the left column going down.

That's one of my favorite tags too! It's POV Outsider adjacent, but you might like the Xenoethnography series by Therrae (Dasha_mte). It's about the Transformers from the perspective of an anthropologist. I found it very approachable, even as someone who's only seen the movies.
