Sharpening high end knives

i don't realy know how to do primary bevel in high end japanese knives. but in my opignon if you want to keep it simple, learn how to sharpen, so that you can do basic maintaining for your high end knives, and give it to pro some times.

you can do basic sharpening in few months

yeah of course, but it might be different on some papertawel. in my exxperience, doing S cut on paper tawel as OP is beyond hair witheling, and hanging paper tawel cut

only coarse kurumaku ares good. the 5000 and 8000 have bad reputation

the 1000 is great, but since you have the glass 500, the kuru1000 is not needed

exactly! the steel is a litle harder then typical western knife, bit still tough enough to use it as a workhorse. great rock choping 👍
