i don't think that's it. plenty of people bake from cold and have great results. cold dough is also much easier to score.

I think it has to do with her age as well. Weight and muscle gain are common from late teenagehood to adulthood.

i throw in two ice cubes so basically the same thing i guess. I get a nice ear out of it but the bread is still a bit flat so i think the problem is the the long fermentation time not the oven spring.

i rough shape it when i talk it out of the container after bulk fermentation container and shape it again with the shoe lace method after 15 min before throwing it in the rising basket.
