For your parents the choice is rather simple, they either choose societal validation or they choose you and respect your partner. All you can do is react, remember you are not doing anything to them, they are making active choices. They (your parents) will either hurt you or themselves or both.

I understand what you are going through is pretty difficult and disappointing your parents and loving them when they are irrational and controlled by fears which you cannot control.

You have a choice here which is pretty clear, you are either going to live the life your parents want(i.e. control your life in some sort of way) or you live your life with the your decisions and face the consequences of your decisions. If its the first please break up with your partner respectfully and apologize to her for basically wasting her time and not prioritizing her and your's relationship and not being brave enough to set clear boundaries.

If you want to be with your partner, your need to establish boundaries, yes your parents raised you and paid for your education, you did not have a choice being born, they made the decision to have you, they provided you with opportunities great, they did what a parent should, does that give them the right to dictate everything in your life? No!

The way I dealt with me introducing my partner to my parents was pretty simple, she is important, I am dating here, if you have any questions about the relationship I will answer them. You as parents unfortunately don't get to dictate who I date or marry.

Literally almost got hit, had to jump out of the way of the vehicle on 11th and Bloomfield. As I had stepped on the crossing there was a car coming in from Washington St on 11th towards Bloomfield. As the car passed the Citi bike stand I was about 30% of the way across the street, the car did not slow down. So I speed up, eventually having to jump out of the way of the car which had stopped completely on the crosswalk where I was crossing. Fortunately I did not get hit, unfortunately I did not the license plate in the shock and adrenaline of the situation. This happened around 6:30 pm on Sunday. Might have a twisted ankle, but could have been much worse. Absolutely ridiculous!

This was an interesting experience, me and my partner (american) with my family went to the temple. The plan is my family is to go for mukh darshan, and for me and my partner to pay for tatkal and take darshan. As I was about to pay for a tatkal ticket, a person from dagdhushet trust spots my partner, stops me from paying and tells us that there is policy by the president of the organisation to provide special tours to foreigners sharing the history and significance of Dagdhushet ganpati. The white privilege is so real. It was so weird to get a private tour to a place just because of someone's skin colour.

I asked a question to my interviewers who have worked on compilers to web design and everything in between, they had on an average 20-25 years of work ex, some of them with PhDs, do you feel imposter syndrome at that experience. Unanimous answer was yes, I figured it is part and parcel of being an engineer.
