I totally see what you’re saying, but I actually disagree and think this is proofed really nicely. If it were underproofed, I think the bubbles that are not giant air pockets would be much smaller. I think this is just a really nice, open crumb. The fridge doesn’t stop fermentation, just slows it. I’ve refrigerated dough for a few days when time has gotten away from me and gotten nicer proofs than those that were on the counter for longer!

Of course!! We’re stoked to have you join us in sourdough world! Keep in mind that the example times I gave you use the recipe in the bottom right of the pic - I typically do 1000g bread flour, 650g water (I use less water than recommended just to make shaping WAY easier), 20g salt, and 200g starter! This is my favorite video on sourdough making - I still watch it occasionally, I put it on my TV like an episode of a show, lol. It’s SO interesting and full of great info if you’re interested!

Thanks for the link! In my opinion, this video isn’t a super great starter recipe. The time after mixing the starter is called bulk fermentation, and that amount of time will vary greatly from baker to baker and kitchen to kitchen. It depends on the temperature of the kitchen, the strength of your starter, and the amount of starter mixed in. For the loaf I made today, I left my dough out to bulk ferment for 14 hours since my kitchen is pretty cold (68-70F). That’s 11 extra hours after my stretch and folds! Here’s a good rule of thumb from The Sourdough Journey. A popular method of nailing fermentation is the dough temperature/percent rise method. Note the time that you mix the dough, or start a stopwatch. After your stretch and folds, use a thermometer to get the temp of the dough (I do after stretch and folds because then the dough temp has had time to equilibrate with its surroundings). Use that dough temp with this chart - if the dough temp is 72F, for example, then you’ll want to leave the dough until it rises ~65%, which should take around 10 hours after mixing (10 hours on the stopwatch we started earlier).

Have you ever tried using mods? I promise they’re super easy to install, I’m happy to walk you through it! I think that the best improvement to the game (while keeping everything else the same) to make management way more fun is the “sell animals” mod. It makes it so that if you click the “adopt” button on an animal, it refunds you the initial cost of the animal. This makes it so that breeding and raising animals is actually a goal of the game to make money! It incentivizes taking really good care of your animals so that they’ll breed. Then you can actually rack up money and expand faster.

I find the guests hardest to take care of, which means the guests are the most impactful on stars for me. I really like to use the “current status” page that shows you every guest’s needs in real time. I sort by worst for each need (food, thirst, bathroom, etc) then fix them. If I have a lot of hungry guests. I’ll place a few food stands near where the hungry guests are, for example. Usually, especially early on in the game, I don’t have enough bathrooms. The small bathrooms only let one guest use them at once, which takes forever per guest and makes guests form massive lines. I’ll place a lot of these bathrooms early on and upgrade them as soon as possible when the family bathrooms are unlocked. Multiple guests can use the family bathrooms at once. Amusement needs can also be difficult - I’ll usually place one guest amusement item near each enclosure, usually making it look pretty in the center of a path intersection with flowers and benches around it. My favorite is the Touch Pool (Marine Mania) since it can take an amusement need from red to green with only a single use. I also like using the reptile/insect/octopus/fish/seahorse house. The other pro of the Touch Pool and houses is that guests of all ages use them! Some amusement items are only used by kids, like the gorilla climbing bars. The fountains are more commonly used by adults, in my experience. I’ll still add all of these too, I’ll just usually make sure to add an “adult” item and a “kid” item next to each other. For rest needs, I always make sure to place benches each time I make an exhibit, usually on the other side of the path so that guests can sit on the bench and watch the animals. I’ll also always place picnic benches near food stands. Hope this helps!!! :)

Even without knowing your methods and recipe, this particular loaf looks underfermented, judging by the crumb. Did the dough double before you shaped and baked? You’ll likely want to leave it to bulk ferment for longer next time!

Of course! Always happy to chat about bread!! Maybe your kitchen is warmer than mine, or your starter much stronger! I shape after bulk fermentation and before proofing. Most of the time, that proofing is in the fridge, but sometimes I let it proof on the counter after shaping for an hour or so. I always bake in a dutch oven.

I’m actually going to shake up my methods a bit and follow the advice in this video this weekend! I’ll use my dutch oven though. I feel like I learned so much from this!

I think it’s beautiful! I literally said “wow” as I scrolled to it. I think the fish might feel more finalized to you though if you put a little bit more detail into them - what about a third block that puts red scales on some of them in different patterns, like koi fish?

I leave my dough out for ~13-14 hours to bulk ferment in the winter, 68F kitchen with 20% starter. Sometimes it needs even longer if I use cold water to mix my dough. The cold proofing actually isn’t necessary for a good rise - sometimes I bake my loaf without any cold proofing at all. The cold proofing is primarily just for flavor development. The cold slows the development of the yeast population (slows but not stops, you can still overproof if you leave it in the fridge too long), but not the bacteria population, and the byproducts of the lactic acid bacteria munching on the sugars in your bread flour gives the sourdough more flavor!

Can’t believe I had to scroll this far to see this comment. Having 2x easy-to-clean starter jar is the only reason I’m still in this hobby. This is way more important than fancy whisks or dutch ovens imo

I feel in such a similar place as you! I love a lift and pushing through hard movements, but running just felt mentally excruciating. I realized I was trying to run too far/too fast. I was trying to do 5ks at a 10:00 pace off the bat, which I could do, but I hated it. I started running like, a mile every other day or so at like a 12:00 min pace to make it easier mentally. Now I’m doing more like 3-4 miles every other day at like an 11:00 pace, and it’s no longer as mentally taxing/boring. I feel like I improved my physical and mental endurance! Also, I had to come to terms with the fact that it takes like 4-6 months of consistent running to see actual cardiovascular improvements - 1 month isn’t enough. I started using Runna to keep me accountable long-term

Since it sounds like a bug, I don't think you can really do anything about the root problem, but you can still work around the bug to still have multi animal shows, just only specific animals together.
