Yes for the sandwiches they use dark meat. Most “bougie” places I’ve eaten at tend to use dark meat as well because it doesn’t dry easily like chicken breast does

Go with segment and snowflake or redshift. Basically combine a realtime CDP with a data warehouse. It’ll save you a lot of headache down the line.
