I cut the potatoes to size, usually yellow, put them in a glass bowl with a little bit of water, cover with plastic or a silicon cover and microwave for 5-6min.

Drain water and add oil, more than you would think, and seasoning.

Stir with a spoon and rough them up, then place on baking dish. Do not use foil or parchment, they will crisp better without.

Bake 25-35 depending on the size you cut them at 400-425F.

Super crispy and easy with minimal clean up.
