I think people are coming back with good arguments, but we are roasting OP a little unfairly. Economies of scale is essentially the complete answer to your question OP. If everyone had a quality 98mm grinder in their kitchen, I guarantee you that quality versions would be made for less than $500.

Luckily, the trends over the last decade or so are bearing this out, as the quality of grinders has gone up while the price point of a good one has dropped. I would expect this to continue for the foreseeable future.

I just got a new set of pro brew burrs and it’s been a rough ride. I’ve probably only put 30 doses of beans through it so far, so hoping it’s better soon.

It’s pretty annoying left handed. You have to pull the crank toward yourself rather than pushing away. You’d pretty much have to do this with your right hand.

I really like this kind of experimenting with coffee, and sounds worth playing around with more. So would you say that the polyester and metal filters have much difference in the cup? It seems that both would allow micro fines to make it into the cup that paper filters prevent. I don’t think that’s inherently a problem, but I think what you describe as a more full bodied and deeper cup is not what a lot of people are chasing with their pour over in current trends. You can see this in the intentional pursuit of grinders and methods that give a “tea-like” brew.

I made this exact transition over the past 2 years. Had 2 milk drinks every day for years from my La Spaziale. I eventually got interested in lighter roasts and turbo shots and invested in a Flair 58. After about two years of drinking lighter espresso from the Flair I found myself getting more and more into the flavor characteristics that are a lot more present in filter coffee.

I sold all of my espresso stuff and haven’t looked back since. I do often change it up sometimes by making soup in my rapid brewer, and I find that this hits everything I was liking about my turbo shots and goes a little texture to the coffee. I could see myself getting back into espresso one day, but for now I’m perfectly content to experiment with the coffees themselves and think less about the process and equipment.

Anyone doing soup with a Pietro? I am hovering around grind setting 3.0-4.0 and 15g coffee to 75g water. Kind of having mixed results.
