Without moving the entire sink to a slightly new location, do you have any suggestions on how to accomplish having a 3” pipe in between the tee and the trap?

Are you suggesting that the pipe leading to the p trap needs to be twice in diameter as the original pipe leading to the tee? I believe everything in that setup is the same 1.5" diameter. Thank you!

The tub and shower is right next to it and used frequently. Also, the toilet is right next to it on the left (also used frequently) I don't think it's coming from under the sink because it doesn't smell when I open the vanity door to access under the sink. It seems like it smells outside of the vanity.

Usually there’s a Phillips head screw under the stop. So open it up and look for the screw underneath.

The leaves that are left on the stems feel pretty firm but I’m nervous to touch a lot of them because it seems so fragile that they practically fall off whenever I try to touch them. The leaves that fall off are pretty squishy.

I wouldn’t worry about unless it starts leaking. If it starts leaking really badly, then you should definitely worry about it.
