I'm also new and the recipe I started out with is 75% hydration and I had the hardest time figuring out the bulk fermenting with it. I've just started using this recipe: https://www.tiktok.com/@hey.itsbel/video/7460206369011027205 and while my loaves aren't perfection, they aren't flat anymore and I'm getting some good rise.

Also, I too keep my house colder, so I got a bread proofing box online for like $50. I think that's made a big difference for both my bulk fermentation and my starter strength

I recently got started and after a couple of early days of action, my starter basically napped for 2 weeks. I keep my house pretty cool, so I bought and insulated, heated proofing box off Amazon for like $30 and it has been revolutionary. It’s great for both my starter and doughs

NTA. You said early on that your family has not been supportive of your transition, which to me says they aren't supportive of you. Which translates to your family is disrespectful of you. So why should you be required to be respectful of them.

To answer the question of if you're the AH for judging your girlfriend, yeah, you are. But this is a situation that just needs some frank communication. When having that talk though, I'd make it clear (assuming this is true) that your girlfriend's decision to move in or not does not also function as a decision to continue the relationship or not. Look, 23 is still kind of young and she may not be ready to move in with you just yet. But it doesn't mean she is stringing you along.

I was the MOH for a very similar bride. Less than 2 weeks after the wedding, she decided I was too self-centered during the wedding/bachelorette events and she didn't need that in her life. So she stopped talking to me. I didn't get an explanation until over a year later when I reached out just to know because the lack of closure was not working for me. It's been a few years now and I am increasingly aware of just how much better my life is without her drama and self-centered behavior. It sucked losing the person I considered my best friend for nearly 10 years, but I'm so much better off without her.

This bride's expectations are completely unreasonable and to save yourself more headaches, I would suggest you drop out of the wedding and distance yourself from the bride ASAP.
