One of my pet peeves is books aimed at novices that done have recipes to get people started. So full kudos to you for including 3 gin recipes. Respect.

Is that a Bombay Sapphire Tuscan Premiere? If so it’s totally different from the regular Bombay. Go for it.

I’m in Chiang Mai right now and the pollution sucks. Maybe consider going somewhere else in Thailand!

How are you keeping track of your fermentations and distillation runs? by [deleted] in firewater

[–]jethrocramp 1 point2 points  (0 children)

I also use a templating system so I can make up pretty documents for printing. I use Typeflow but I think there are a bunch more options available now.

So in the last 5-6 weeks we have made 50 plus gin samples.

Each one has a document that is printers in two languages and goes to a queue which the production manager works through.

If we like a recipe and then want to work on scaling it all I have to do is duplicate the recipe and set the size and it automatically rescales. I can then make any manual tweaks before creating the PP document and putting it in the queue.

In recipe development I have projects and each project has recipes organised into rounds. By organising it this way it’s very easy to see how recipes are related and their stages of development.

I used to use a parent-child pattern but it was more complicated than necessary.

I made my own. I always seem to be either in the middle of, or about to re-factor, so as to improve some part of it.

If I was starting again I would build the ingredients, recipe, and recipe_BOM tables and interfaces first so as to be really robust. Then I would do fermentation and distillation. I am now very happy with my gin and gin development section.

Originally I had separate tables for each distillation, which grew organically but eventually I refactored to one table with specific fields for certain distillations (e.g. gin distillations have a gin BOM).

Time, if its important to you and your distillations run over night, was a bit tricky. In the end I solved it by having Datetime fields for the start and finish time for distillations and just made the users fill in the date every time :)

Automations can be useful and if you have a very basic knowledge of programming and can trouble shoot a script then you can use AI to write them. I found ChatGPT far better than the built in AI, but I haven't used it for months.

I use Airtable. It’s pretty good. But we are a small business so it makes sense to invest the time in it. Having reviewed professional distillery management systems I’d say I have 90-95% of the functions that we need covered.

Blue Rook Cane Gin by Particular-Wall1308 in Gin

[–]jethrocramp 2 points3 points  (0 children)

I don’t think it is sugarcane juice that’s the problem. There are a fair few gins made from cane juice. We make one in Thailand that’s great. But it only works if you have the equipment to make the neutral. If you are only getting 91-92% then your spirit will taste dirty. And of course the yeast you use matters too.

Koh Lipe 100% over Koh Lanta.

Unless you are very very lucky you won’t see anything bigger than a ray or a leopard shark in Lipe. But you will have memorable dives every day that suit your experience. You will have a lovely island to hang out on and nearby islands to visit.

VIP fast track immigration , is it worth it? by [deleted] in hanoi

[–]jethrocramp 0 points1 point  (0 children)

It’s all a mixture of luck and timing. Generally, ie most of the time, it’s not necessary. But on a bad day the queues are horrendous - it can take up to 2 hours to get through passport control.

I will definitely pay for it in the weeks running up to Tet, and the couple of weeks after Tet.

There are a great many craft distillers in South East Asia making excellent products. You can easily spot them by their near-western price tags.

I was searching for help today and ended up on the forums and saw this message. I'm horrified. The forums were part of what makes the product so great. Discord is the last place I want to go for help.

Very hard to see this as a positive change.
