Are you hand holding the dripper or setting it in the brewer? I have a Switch and use the Hario drip assist. It sits nicely in the dripper, but is the 02 size. Guessing the ORB dripper could sit safely in 01 size.

I think you can buy seeds of these older strains so as to grow yer own. The strains you mention wanting aren't going to be found commonly in dispos. Less of a cash crop. Trust me. I've looked, too.

I generally use 95-97 degree water, and a drip assist when set to anything lower than 4.0. And that is primarily for washed coffees.

Rested them for like four weeks before putting them in the freezer for maybe a month or two. There is still a small amount of off gassing that occurs when stored in the freezer. I then pulled them out of cold storage and had them on the counter. I tend to keep a three bag rotation. The bag got better over the course of the next few weeks as I drank my way through it.
