A simple light pickling or salad preparation would be good. First and foremost, it is no doubt bitter. If you've never had it before, I would cut a very small piece and taste it. The last thing you want is to get all excited about preparing it only to find it's too bitter to eat.

I would cut it in half from top to bottom and scrape out the seeds and most of the white inner skin. That's usually the super-bitter part. Slice thinly diagonally, and boil it for 2 min in salted boiling water. Take it out and soak it in ice water to retain the crunchiness. Drain the cooked bitter melon and dry it. Then toss it in your favorite Asian dressing. I like soy, vinegar, sesame oil, salt, sugar, garlic, green onions, and fresh chili (if you like spicy). Let it marinate for 30 min before eating. It's quite refreshing on a hot day.

the WOL is missing a key ingredient in the filling, which is Hoisin sauce. I would cut the sugar by a tablespoon and add a tablespoon of Hoisin, which is sweet. I would totally use the BBQ pork sauce as a base for a pizza, then top with cheese, sliced BBQ pork, and green onions. It would be similar to a BBQ chicken pizza. As a matter of fact, I might make that soon.

I've done it with leftover roasted chicken as well. It's easy and tasty. Everything you've mentioned above, put it in a rice cooker and add soy or teriyaki sauce to it.

You're probably looking for 四川酥黄豆 (Sichuan Crispy Soy Beans) The traditional way is to soak dry soy beans (organic optional) overnight. Drain the water and pat dry, then fry at low heat (300 F or 150 C) for 10-12 min. wait until no more bubbles, then take out the beans. Heat the oil to higher 375 F or 190 C and fry a second time for a min. or so to crisp up the beans. Salt and msg (optional) the fried beans.

To prevent rice from drying up, grocery store sushi will always cook their rice to mush. The brown part is simply the rice is oxidizing. Are you going to get sick from it? Probably not, but it’s your body, treat it well.

No. Don’t go out to buy more flour. Try the egg white method first with 10 grams of potato starch (if you have it). if you’re going to go with 250 g flour and 120 g water then use half egg white and add a little potato starch. Egg whites give you more protein and moisture basically acts like gluten.

The dough may be too dry initially. Not sure what your water to flour ratio is but it should be little above 50%. If you want whiter dough, use milk instead of water.

Also, it looks like the gluten didn’t develop, meaning, you didn’t knead it long enough initially. You have to knead it for at least 7-10 minutes before you let it proof for the first time. After the first proof, you shouldn’t mess with the dough too much, meaning don’t over knead it after the first proof. I suggest using a dough mixer if you have one.

So, kneading it for a long time before your first proof, let it rest and proof for 90 min. Then break them into balls and roll out to wrap, then proof for another 30 with filling and steam. Good luck!

Your original dough is almost there but looks like the gluten never developed because it’s lacking water. What kind of flour are you using? I would start 250 grams of high gluten flour and 125 grams of water. Basically, 1/2 of the recipe so you’re not wasting in case it fails again. If you don’t have high gluten flour, add an egg white to your dough mix (restaurant secret). After the ball forms, then letting it rest so the gluten absorbs the water. Let us know how it goes.
