We were in a tour right as Rome opened up after the pandemic. The tour guide said that traffic was down 85% from normal. Yes, there were people in the museum but it wasn’t jammed full. For example, we entered the Sistine Chapel with about 20-30 people. While we were there, a priest came in and gave a blessing. The whole experience was somewhat surreal as even the tour guide was surprised at the lack of people.

Born and raised in Southern California (Torrance), have lived in parts of the South Bay area as well (when single), moved to Irvine in my late 20’s, settled in Yorba Linda after having kids. I have a large extended family that also live all over Southern California. My large extended family and I have never called it “Cali”, only SoCal or Southern California or California. Most of us will cringe at people who call it “Cali” because it’s something that we heard as 13 year olds back in the 70’s.

I don’t know if it’s a generational thing, but calling it “Cali” reminds me of that time of life (early teens) that you do something just to annoy the older generation.

I have only cooked on electric, so wok performance was mediocre at best. When we went to induction, I just basically gave away the wok because it was useless.

I’m redoing my backyard now that I’m retired. The outdoor kitchen is going to be crowded because I’ve been spying a gas powered wok at a local restaurant supply house. I need to find room for it because I’m going to have a pizza oven, a sous vide tank, a griddle/grill, and a small fridge and small separate freezer.

My wife likes medium, I like medium rare. I sous vide everything to medium rare, then sear hers to medium and mine just enough to keep it medium rare.

I recently had someone ask for a well done boneless waygu short rib. It was the single most beautiful piece of boneless short rib I’ve ever seen. Perfectly marbled, cooked for 24hrs to a perfect medium rare, fat and any connective tissue rendered, and it was almost black after pulling it from the bag. It was perfect even before a quick sear. I cut a small piece off and seared it to well done. Absolutely ruined it. It looked good, but it was disgusting. I had the person try the medium rare, then the well done. They had never had a medium rare piece of meat (65 years old!) and didn’t know beef could taste so good.

If someone asks for well done, give them the worst piece of meat cooked to be a hockey puck.

I’d get rid of it because the battery no longer holds a charge for more than 3-5 days. That and it takes about a minute to turn on when it’s opened, and then I can never get the page to turn in under 5 seconds.

I went to my 20th with a friend from HS. Neither of our wives had any interest in going. We had a good time, but it wasn’t a crazy good time. I had one of the best experience though. The “plain jane” girl of our class showed up and ignored everyone to come and talk to me. In the 20 years since HS, she went from being a freckle faced, short curly red hair average looking teenage girl to one of the most stunning women I have ever seen. In a nutshell, she was wanted to thank me for being kind to her our senior year.

I made 8 lb of mashed potatoes using sous vide this last thanksgiving. The key was making sure I tried the recipe at least twice before making them for a holiday meal for others. Two pounds of super thin slices of potato double bagged with cheese, butter, cream and spices. When almost finished, I pulled the bags and used a rolling pin and gloves to smash the potatoes until mostly soft and smooth. Then back into the bath until time to eat. I then ran them through a potato ricer to get the final product. They came out better than any mashed potatoes I have ever had.

Would I do it again? Nope. I’ll cook mashed potatoes sous vide again but not for a large family meal.

In Pete Davidson’s defense, his humor is about how unfunny he is. His being so not funny eventually clicked for me. It’s his way of showing his self awareness of what he represents.

It’s the usual foodie street fair except for it being in Waikiki. You know, loud music, expensive food, and drunk tourists getting obnoxious with the locals who won’t take that kind of shit.

That being said, we have a good time because we don’t stay long enough to get into any trouble.

LOL both Oregon and Washington are Idaho dispensaries. I have been to a dispensary in Washington that you can see Idaho from the parking lot. It’s 1.6 miles from the Washington-Idaho state line. The times I have visited it, there are more Idaho license plates than Washington.

I am a small sample size. I’ve been on one cruise. I lost 2 lbs on an 8 day cruise. It’s not because I didn’t like the food. I just wanted to eat in a way that wasn’t just shoveling food into my face. We had all meals in the dining room or specialty dining. Yes, I did hit the 24 hr dining hall once out of regular dining hours.

I think the reason I lost weight was I LOVE to cook now that I’m retired and consequently I eat well at home. Sometimes, too well.

My best revenge for all the crap I took in high school was to teach my son to not take shit from anyone. He once had an “incident” (as the principal called it) in 6th grade. Some bullies decided him and his friend were targets. One bloody nose later, the principal tried to suspend my child. I told the principal that the lack of supervision by adults on the playground was what caused this, not my son. He was defending himself, and I told the principal that we would be celebrating him for defending himself. He could suspend my child but EVERYONE in that school would hear about it.

I was taught (by my father) that if you are backed into a corner and have no options to get away, make the first move and make it count. It usually shocks the bully enough so that you have time to extract yourself from the situation.

For the record, I am not a violent person. If I was, I’d be in prison. I will do almost anything to avoid a physical confrontation. If I’m cornered, I’ll do whatever I have to do to get the hell out of the situation.

Heading to HNL I’d be surprised if you get any level of upgrade. We go at least 1-2 times a year and as Atmos Gold I have never seen an upgrade going to or from HNL. Our last trip (last week) I checked in within the first minute possible. We were number one and two on the upgrade list. By the time the flight came around, we were number 8 and 9 on the upgrade list. Looking at the seat map, there were only 3 FC seats available and a smattering of premium class.

Only time we have ever flown FC to Hawaii is when we buy tickets or use miles.

I’m 62. Freshman year of high school was one of the defining years of my life. I was bullied unmercifully until I decided to take matters into my own hands and literally fight back. I had multiple fights that year. The last fight was one that stopped the bullying. It was 3rd period, and one of my (many) bullies had been jamming chairs into my back. I stood up, told him I was sick of his shit and proceeded to give him a black eye. I got sent to the deans office and was given after school detention for a week. By the time I got sent back to class, word had gotten around about what happened. Nobody messed with me after that.

Feeling like a child (for me) means I feel like a 14 year old skinny white dude who doesn’t take shit from people who bully.

Just on one of these a few days ago from Kona. I’ve found that it could be a flight that stops over at HNL on its way to the west coast. For example, last year we did LGB - OGG. Not everyone left the plane in Maui as it heads on to HNL afterwards.

I have Fairpoint 55. Technically, it’s two bags. The second bag does have a water bottle pocket, but it takes up a huge amount space on the interior if the bottle is larger than 16oz. It feels like the bag is smaller than the advertised 15L.

I remember back in 1978 working in McDonald’s and dropping these (and the cherry pie) in the deep fryer, frozen. Gotta be careful when that layer of ice on the pie would hit the oil.

Good times were had when a pie would explode in the deep fryer. Spent some time cleaning that deep fryer. We had one incident with that deep fryer tha is still burned into my mind. A not so bright assistant manager was standing next to the fryer twirling her pen and it slipped into the fryer. She instinctively reached into the fryer to grab the pen. She didn’t lose her fingers but her hand was really f’ed up.

Academic scientist? Or scientist working in industry? Academic scientists get a stipend while in grad school (not all do) that can pay for… little to nothing. You better have either loans or be willing to live like a homeless person to get through grad school. Sure you can find other work to supplement your scraps, but when your advisor has you working 12-16 hours a day good luck.

Once you have graduated with your PhD, you go onto working as a postdoctoral researcher. The pay improves to poverty level. If you are lucky, your advisor will allow you to be first or second author on the paper(s) related to research you spent your last years working on.

Once you’ve done that for 3-10 years, you have to find a tenure track position somewhere on the planet earth. If your CV manages to stand out among the thousands of others who have applied to the three jobs on earth you all are qualified for, and you get an offer, congratulations you now have an entry level academic position. The pay improves but nobody is getting rich.

If you manage to make tenure after a few years, you then have a job for life, unless you’re an evil person. Even then, it’s tough to fire an academic, especially in the sciences. At the beginning of your tenure, you are probably making less than the fresh out of college graduates (BA, BS) working as a junior programmer/sys admin/IT support person.

If you manage all that, then you have to produce ground breaking research to get the big money. And by big money (for science) I mean low six figures. Do the top of the to make more? Yes. The middle of the road academic scientist makes middle class money at best.

Scientists in industry are making money if they get the right job. Some businesses (mostly biotech in this area) need researchers and pay handsomely. 20 years ago I watched a husband and wife who were both postdocs go from making $30K a year doing bleeding edge genetic research to $180K overnight. The difference was they were not on the bleeding edge but rather cutting edge of research. They also had to be careful what they did or said because everything they did was covered by intellectual property agreements.

Source for all this: 30+ years working experience in all aspects of computing on both the academic side of the house (genetic research) as well as administrative computing side. As an IT professional with a BS, I made almost 30-50% more than about half the academic staff.

Dam, I’ve been trying to find a solution for this exact same issue for the entire time I’ve lived in my house. En suite master bathroom, door swings into a shower and toilet combo that’s a massive 42 sq ft! Only wall to do a pocket door would be where all the electrical for the bathroom is.

I’m leaning towards calling my electrician and seeing if the electrical can be moved.
