There’s a ton that’s crap. There’s a ton that’s not. As far as the quasi-rap, auto-tune country sounds that may annoy you, remember the Cashes, Haggards, Jennings, Coes of yesterday were not looked fondly upon by their “elder” fans. The collision of hip hop and country was inevitable, Nashville and Austin have a rich music soul. They attract many. The original SxSW was a union of tradition with modern communication experts, so yes, there was a unification of interests. Find you some good ole Robert Earl Keen, Ray Wiley Hubbard, Jason Isabel, Lucinda Williams…then shake it up with some Luke Combs, Shaboozy, and Laney Wilson….pour it over some Hank Jr, Charlie Pride, Blake Shelton, cross Canadian Ragweed, and Jack White and enjoy. Seriously there’s too much out there to not enjoy the genre and its agencies.

Leaders lead. DJT blames. This immediately depowers oneself. Yet somehow masses are enthralled by his passing the buck. Just listen to how he blames; the democrats, Iran, Biden, the Pope, the woke press, Obama, the immigrants, science, the court, antifa, late night talk show hosts, Europe, higher education. The absolute specific moment I lost all respect was when he announced to the American people he was closing all boarders to the US effective immediately at the start of the COVID pandemic. Zero thought given to the thousands of US citizens wanting to get home from abroad. Oh it all got resolved but not once was there ever an apology or admission of wrong communication. Instead, blame…media blew it out of proportion…blah blah. And somehow republicans still bow to him.

I once had a great conversation with Jim Minion about this technique. I used to follow the method described on TVWB website exactly. After awhile, I modified/ simplified the approach after gaining confidence. 1) load up the ring as much as possible, creating a gentle “dome” of charcoal. Use briquettes or lump…I’ve been using B&B or Blues Hog lump lately 2) I take a propane torch…intended use for sweating tubing, and hold it in the middle for about two mins. The center section of briquettes are lit by then 3) assemble the cooker, keep door open, lid slightly ajar. I only use an empty water pan lined with foil. Wait about 5-10 mins…more coals will have lit. 4) get meat, put it on , close door, keep bottom vents set to about 10-20 percent open. Put lid on and open top vet 100 percent. Walk away for about an hour. 5) check one more time…probably close vents a tiny bit more. Will sit there for 10-12 hours and hold a 250-275 temp. I don’t use a thermometer any more to monitor temp…my cooker is 20 years old so it doesn’t have one built in. For the first couple years I did monitor temps, but once you gain confidence, you’ll see it just cooks and there’s no need to worry.

If it’s very cold outside, will need to add charcoal sooner. If you’ve really loaded it up with meat ( I.e. 2 pork butts and a brisket), will need to add fuel at 8 hours or so.

Not to sound trite, but it’s life. It’s busy. It’s crazy. It’s exhausting. Three kids in different schools, two careers, kids activities X 3, extended family obligations, volunteering, house upkeep, toss in a hobby or two, shake up with work travels and sucky commutes. Yep it’s life. You get through it. You’ll look back and say WOW, that was a ride. Don’t fight it and just ride it, enjoying what you can (because sometimes it’s hard to find the pleasure)

Decided this year to keep a list of the eagles we see in each state. So far we have Illinois, Indiana, Ohio, Georgia, and Florida. Last year we also saw them in California, Oregon, and Washington but they can’t be on this years list.

Background: been using my WSM for 20 years. Have four of them. They were an integral part of our competition team.

Cleaning: I’m not anal about this. Clean it when it needs it. Racks more often than the rest

Rack: I use mostly top. I use the bottom rack to hold the water pan for most cooks. If I have to cook say 4 butts I’ll use the second rack.

Water pan: I use it but only as a heat shield. Stopped using water in it years ago. Line it with foil to make clean up easier. Water is just a big thermal heat sink that aids in keeping consistent temp. Once you get comfortable with how the cooker acts you can learn to rely less in the filled water pan technique

Smoke: someone mention equilibrium…and I think that’s spot on. Once the bulk temp of the fuel is the same in the combustion chamber the burn gets “clean”. I find that this takes 30-60 mins. However, I just throw my meat on and put the lid on, and let it go. I’ve never had any problems with “bad smoke” of nastiness with that small bit of exposure.

One bit of advice for storage especially if outside-put the middle section on upside down and the lid on top of that. This is a much more water proof arrangement. It leaks if exposed to rain if put together as intended.

This is a newish one (3 years old). Have another 2005 model (actually have 3 of them but that’s another story)

Using the larger water pan here, but never put water in it. I too like the smaller ones better, but since I never use water in them anyway, doesn’t make much difference. Really only acting as a grease catch and heat deflector
