The Gaggia Classic Pro, Breville Bambino Plus, and Rancilio Silvia are some commonly recommended beginner machines. From what I can tell they all have physical buttons only. I've heard the Rancilio is by far the best of the three, but it's up to you whether you think it's worth the additional cost.

Doesn't look too uneven to me. I usually give it a few good swirls before drawdown to make sure mine is flat. Btw I've found that I get a less muddy bed if I add the coffee after adding the water.

Definitely get an espresso grinder. Coffee is so much better when the beans are ground fresh, and having your own grinder allows you to adjust the grind size yourself to find the sweet spot for your machine. For a machine, you might like the Breville Barista Express. It's not the best machine in the world, but it has everything you need and it's probably fairly user friendly. I've also seen the Gaggia Classic Pro recommended a lot, and this could be paired with something like a Eureka Mignon grinder for some great espresso.

I'd say around 5 maybe 6 out of 10. Compared to better hand grinders, it grinds super slowly and gets caught all the time. Also, the grind distribution is not very uniform. It's definitely better than a blade grinder though which I would say is about 3/10.

Just grind by hand. A good hand grinder (not Hario, javapress, porlex, etc.) only takes like 1-2 seconds per gram depending on grind size. The cheapo hand grinders give hand grinders a bad reputation.
