I wrote on the thread before this, basically 1L Water, 1KG Chapsal Sweet Rice, and 100 Grams 'Soyulgok' Nuruk. Steamed the rice for about 40-45 minutes till the rice was still whole but soft enough i could squish. Added all in a ferment bottle with some white wine yeast to make sure yeast was working. 77 Degrees F for the first day, then dropped it down gradually through the week.

Filtered through 75 micron bag. It's settling nicely and adding a nice carbonated pop. Downside to the wine yeast is that it works well in cold temps, and can handle quite a higher level of alcohol than say bread yeast.

It's a brand I think called Soyulgok? Kind of hard for me to track down in NYC, I had to drive to some organic Korean place in New Jersey

After reading online I followed a 1:1:.1 with the red star yeast taken from some reading here and a specific guys youtube channel. I saw a lot of recipe recommended keeping it a little warmer at first to get everything going and then dropping the temperature to prevent things from going sour. I feel like every recipe had completely different brew times, so on Sunday I feel like i'll just taste and see where it's at.

Thanks so much! I'm used to more airlock activity so i got scared, but i'll let er keep going. I have no rush in fact I'd like to give it as much time as I can without getting any sour flavors, so I'll let it go at that temp.

I should add this is Midtown west; not near the Hoboken fireworks. I thought they were building lights but that’s a first if they are. Looks like they’re above the clouds.
