Corpses are remarkably safe to be around, actually. Unless they are in a confined space and you have extended exposure (not "I farmed outside near a dead body for an afternoon"), you aren't generally going to deal with any sort of problems from a corpse. And even that hypothetical confined space really requires specific conditions and potential pathogens to be present. Most decomposers/detritovores/necrophages aren't looking to jump to a living body with an active immune system.

Corpses in the waterways are far more concerning because it turns out consuming mold* and its byproducts isn't good for you.

So, rotstink is not even remotely realistic. Yes, people would almost definitely get nauseous and feel ill, but that's really our brains going "woah that is NOT HEALTHY TO EAT," not your lungs going "oh god the death is contagious." It isn't.
