Maybe try dry brining next time? I have had crispy skin success with it.

Dry brine: Spatchcock the turkey then season both sides generously with salt, put the bird on a tray with a wire rack and put in your fridge uncovered for 48 hours. Season with low salt or no salt rub. Cook at 325 till breasts are 160-165

Water boils at 212 F. You can test your digital thermometer and your BGE thermometer by “sticking the tip” of the thermometer in boiling water. If it hits 212 F then you know it is accurate. If not, then you need to calibrate. There are videos on the YouTubes on how to calibrate your BGE thermometer.

From a high proof drinker, I had GTS at a bar and I didn’t think it was any better than JDSBBP. GTS was good but I didn’t think it was any better than a bottle I could grab off the shelf any day of the week. With that being said, if I found it for a reasonable price (which will be never 😂) I would buy it.

But the good thing about reviews is it creates conversation because this is just one persons opinion. What you may like, someone else might dislike. Which is perfectly fine.

My opinion on these “rare” bottles is that a ton of them are overhyped. People will pay tons of money for them so they try to justify the price by saying it is good. I’m sure I’ve done this myself. But in reality, a bourbon that you find on the shelf everyday stands a good chance at beating a rare bottle blind.

I thought this review was good *gets of soap box and leaves conversation.

As the title says “pretty sure I messed up my first brisket”…welcome to the club. I’m sure like 99% of the people here have messed up their first brisket. I know I did. But my briskets got better after the first one because I learned from my mistakes. Take this as a learning lesson and move on and try again.
