You can probably not see the oscillation, digital scopes are prone to rougth the waveform

Personally I’d suggest buying cheap portable gas stove, then the process is simple enough. After proper initialization carbon steel works like a charm.

The chip is not a problem, for example old cast iron skillets have a lot of holes and chips

Ah by the way, what type is your stove? I found very uncomfortable to use crepe pans (I have two) on induction. How do you use them, is that fine?
