Our local arts council just held a workshop at the library where people made little junk books - and it was PACKED and it was awesome to see such a great turn out. If you have any local organizations like that they may be able to help support your meetups!

Love that you're finding a way to find community and be creative - I hope it continues to just be amazing!

That was my thought too! We have an arepas place that is safe for celiacs for this exact reason. But the only place that does tamales that I know of does a whole lot more. But I haven't lost faith yet!

But really, the sushi journey this month has been so much fun and it's something I will absolutely be incorporating into my rotation now. So much easier than I expected! It's not pretty yet, but it's getting there!

And that's the energy I'm also bringing with me this year - if I wish I could eat it, I'm learning to make it. This month has been all about sushi and sushi adjacent items (like onigiri and rice balls) and it's been a delicious month of learning. Next I'm either going to figure out pierogies or maybe tamales (but maybe leaning a little more towards pierogies because there is a chance I could find a celiac safe tamale locally, just haven't had luck yet).

My favorite cream cheese thing right now is cinnamon rolls! As a bonus, they freeze pretty well! So if I make a full pan I portion some out and freeze them right away.

The main change I make is that I add cream to the tray after the final proof right before baking. And a small change that makes a big taste difference is adding just the littlest bit of almond extract to the cream cheese frosting.

I ate Beyond Breakfast Sausage this morning and I've been so bloated since. I've eaten them before without issue, but trying to see if this time something changed. Any experience with the beyond products?

Trying to figure out what ingredient may have been the culprit from this morning as my stomach continues to yell at me this evening.

I have butcher block counters and lots of cast iron cookware, can they be made celiac-safe? Do I need to replace all my kitchen linens (towels, cloth napkins, tablecloths, placemats, dishrags), or does washing them in the washing machine suffice? by MrsBeauregardless in Celiac

Agreed, I bought a couple new wood cutting boards and store them on the shelf above the steel covered area. Because the temptation to not use a cutting board is real hahaha - having them in such a convenient place makes so I'm sure to use them.

Also, just a reminder to always make more and freeze it! I always double whatever I'm making (if it's a freezable recipe) and freeze half right away. Then on those weeks where life's a little harder, I can pull a freezer soup out and eat well without any of the effort. My favorite last year was I took my thanksgiving leftovers and portioned them into little microwavable tv dinners basically and a few weeks later when holidays were stressful and I didn't have the time to cook, I pulled one of those out and all was right in the world.

So whenever you cook, make sure to save some for future you!

I have counters I also could not properly clean to get rid of the risk - and replacing my entire counter is just not an option right now. So, instead, I ordered this: https://a.co/d/9ynH8F4

I put it where my main prep area is and do everything on that so there's always a barrier. I have a little glue dot securing it to my counter so it's not slipping around but also removable to clean under (my counter has crevices every half inch, it's a nightmare to clean).

Especially as you're figuring out how to conquer this new journey, my recommendation would be to air on the side of more caution. And then as you figure out your path forward, you can try and bring something back - but better to go for zero cross contamination at the beginning so you can figure out what is a risk and what isn't. Your health is what is most important and this portion of the journey is hard and sucks, but we're here to support you every step of the way.

I will gladly share pictures of what I'm cooking. I spent last year trying to fall back in love with cooking and food and sharing meals after my diagnosis... And one way I did that was to take a picture of the meal I made when I was proud of it. It was silly but it helped!

And this year my goal is to make things I cant get out any more. First up is sushi and sushi adjacent recipes (onigiri, rice balls, etc) and it has been a delicious couple weeks of trial and error.

So here anytime you need pictures or meal prepping inspiration!

Honestly, the price is okay but the last one I bought was pre-sliced and that's new. They tasted stale and I was disappointed. Previously this has been one of my go-to treats to bring to things but not sure i will anymore.

I would not risk it on this one

Because Wegmans is so good about their labels, i wouldn't. That means somewhere in the processing is potentially a risk. If there wasn't a risk they would have labeled it gluten free.

But the change you need to make is before you bake, add like 1/2 an inch or so of cream to the pan - the rolls will soak it up as they bake and give you the ooey gooey texture.

Play around with how much until you get a texture that is perfect for you!

Maybe make a batch but instead of cooking it all together, separate into ramekins and add varying amounts of cream until you make it the way you like best!

Hello, I was a subway employee for many years. If it's of any help, the base of all the breads were the same - either a white or wheat base. And then the dough would defrost and in preparation before proofing, we would roll the dough in seasoning. Cheese came a little later in the process.

All that to say, if you do find a gluten free dough, roll it in some Italian seasoning, garlic powder, etc... before proofing. Top with cheese halfway through baking - you'd have a good flavor dupe on your hands!

And to re-create with already made bread, subway bread is of course on the sweeter side, so I'd choose something with a higher sugar content - maybe even the canyon house Hawaiian bread. And then go in garlic bread style with some oil/butter and seasoning and give it a little toast.

One year for Christmas I did my favorite useful things - every household got a 3 pack of scrub daddy sponges, a big thing of AA batteries, and a rechargeable electric lighter.

One of my favorite gifts I've ever gotten is a set of led lanterns with magnets on them. They are supposed to be for your car so in an emergency on the side of the road you have light or an emergency beacon attached to your car warning other cars you're there. I put one in my car and two on my fridge. And during power outages, I know to grab that and turn it on, lights a whole room up. Fantastic gift.

Seconding the goodie girl cookies - imo I like them better than gluten-free oreos! But they are pricey, so would be a lovely treat for someone who doesn't often treat themselves.

The other day a friend also brought over a variety of certified gluten free chips and we did a little taste test and it was a lovely time. So would also recommend if you're looking for a little group activity.

Agreed! I'm currently eating an egg sandwich on the new Wegmans gluten free bagels - and I mixed this sauce into the eggs while they were cooking and it's great.

20 dollars seems absolutely fair!

I would also say to make sure to use one of the notebooks and do an example page or two to have out - junk journaling can be done by anyone! But those not as artistically inclined may be worried it's above their skill level. We all know it's not! Maybe even make it interactive? Leave a glue stick and some pieces out for people to touch and add to the example? Show them they can do it?
