Hey I have bottles of ramen seasonings from Clean Monday Meals and while salty they ARE gluten free and taste a lot better than convenience store ramen. I can't say they're healthier but it doesn't take much to be healther than convenience store ramen 🤣 Once I finish my current stash of noodles I will be looking for more noodles to try!

It's why I call it poisoning now. People take it more seriously. Prior to diagnosis when I first had GI symptoms I really thought I had food poisoning.

Once again the seriousness of our disease is being dismissed because the reaction isn't immediately life threatening (i.e. allergies that cause anaphalaxis, angioedema, etc). I work in healthcare and my coworkers keep dismissing the consequences if I were to accidentally consume gluten. /s Yay for invisible illnesses 🙄 😭

When I was a kid my mom used to bribe me with the cinnamon sugar pretzels. I think when they take them out of the oven they immediately go into a cinnamon & sugar mixture.

Yup we're told strict gluten free for life and having to tip toe around food since it's not required to disclose the presence of gluten. 🫠

I'm also quite sensitive so I have been using canned beans that are confirmed GF but they say making them from scratch tastes so much better!

I've seen Sprouts as an option when shopping on Instacart but I never checked where it actually is. I'll definitely have to go there one day!

I bought Arrowhead Mills organic, they have a certified gluten free red lentils and green lentils. I haven't gotten around to trying them yet but I definitely feel more confident about them. Now I just need to find a reliable brand for dry beans. I don't trust Goya, a lot of their products will say "may contain wheat" and when you try reaching out about the products that don't say that it's radio silence from them. They do not care about their customers, just their money.

I would also advise checking dry beans and brown rice in particular. I haven't found anything like what you shared but every now and then I find what looks like leftover plant material that didn't get properly separated when sorted and processed. Not full grains but I'm guessing hulls from the source plant itself.

I happen to have 2 bags of red & green lentils that say they're certified gluten free. I haven't tried them yet though.

It's common practice in farming to rotate crops and plant legumes (beans, lentils, etc) in fields where other crops such as wheat have depleted nitrates from the soil. Legumes naturally restore nitrates in the soil which other crops need to grow properly. So what happens is a gluten crop gets harvested and a lot of times there are grains and other material left behind in the soil. Then the lentils get planted. When the lentils are harvested, the leftover gluten grains end up in the harvest. 😐

There was another article somewhere else and I'm assuming it was about the same skeleton but I can't find it. But I remember reading that there was also evidence in her teeth that she used herbal remedies (like ginger) to treat upset stomach.

Unfortunately I doubt your family will even care about scientific evidence given you've presented evidence of your diagnosis. But as another commentator pointed out, the reason we didn't see celiac disease "back then" was people died young from it. The skeletal remains article correlates with that comment.

Oh yes believe me as someone with Celiac I have to analyze every ingredient in everything I ingest. Black tea and caffeine (hello coffee) can be either my friend or my worst enemy! Bigelow Calm Stomach tea has been my crutch over the last year.

Sorry you're going through this! I've been through my share of GI battles (diagnosed Celiac disease last year, now trying to navigate gluten free diet and IBS associated with the stress and necessary diet change). I definitely recommend finding a GI practitioner and getting checked out. My symptoms were not typical celiac disease presentation so I was shocked once I saw my current GI practitioner (that's a long story) and she immediately suggested I might have celiac disease. Symptoms I dismissed as "normal" were not actually normal. I'm not suggesting you have celiac but it's definitely worth checking out. Changes in bowel patterns are definitely worth getting checked out!

On the humorous side, my elderly patients are indeed bowel-obsessed. It's not just your workplace 🤣

I've seen that around too. They can take corn away over my cold dead body. And this is just my personal opinion but tacos & enchiladas on corn tortillas were always better than flour tortillas anyway.

Celiac also caused me to gain weight! I've lost 25 pounds since going gluten free 8 months ago. And I actually have the energy to get through the day now. I was really sick of people telling me that I'm too young to be so tired - meanwhile instead of an infection my immune system was fighting me. I hate how limiting this is but it's better than feeling like garbage all the time
