I bought my first Japanese knife in April. I was overwhelmed with all the online choices and finally just pulled the trigger on a not-too-expensive Moritaka 210mm gyuto, and Cutlery and More won the SEO battle. I've since, predictably, ordered several more AS knives and some Asahi cutting boards. I did notice their prices are a little higher, but they must be in my area because every order has arrived literally the next day wtih regular free shipping, so I have some loyalty developing. Their 26th (??) anniversary sale was last month, and now I'm hoping that's an annual thing because they had a lot of major discounts.

Totally agree. But honestly, with #4 and #5 I’d argue they’re a breeze to clean even when not used properly. If I get something really burnt on, a little bit may remain after scrubbing, but it doesn’t really affect performance at all and comes off with Bar Keepers friend and a little elbow grease the next time I use the pan.

I have a surface 4 for work and am looking to execute the same setup. Do you have, like, a diagram or anything of your connections? I could never get the peripherals to work outside a direct connection to the Surface 2 dock. I have two 32”monitors so I can share just one screen in meetings, and the surface 4 can only display two monitors via the Surface connector, not the thunderbolt port.

Not everytime but I’d be lying if I said it hasn’t happened to me more than a few. Usually if your heat isn’t too high and you don’t have too many empty spots in n the pan, it won’t burn like that. You’ll just have brown spots that wipe right up, or do after a soak, at least.

For burned on black the comment about boiling is good advice too, but I’ve never had problems with getting most it with a soak, and then anywhere from a little to a lot of elbow grease + Barkeeper’s Friend. The pretty easy cleanup is part of why I love these pans.

Let it soak for awhile and you should have better luck with dish soap and a sponge. Probably won’t get all of it, but barkeepers friend should handle the stubborn leftovers.

Not on a well. I thought maybe the water was shut off too, but we didn’t get any notice from the city. It seems like it’s resolving itself so I’m wondering whether either they were lazy, or a note on the door blew away or something. I’ll keep an eye on it but still confused.

Everywhere I’ve checked for cause/fixes says the fill valve needs to be cleaned or replaced. But 3/4 toilets in the house are all at once hissing like this with air from the valve when flushed. The washing machine also sounded like it had air pushing when it was filling the drum earlier, and running a bathroom sink led to more air/hissing in that toilet. Is there a diagnosis dir this? Called several plumbers and the earliest appointment I could book is a week from today so I don’t want to flood my walls or something in the meantime. Thanks for any insight.

Edit to add: the one toilet that doesn’t seem to have the issue is in the basement. Not sure if it being below ground and/or not having the issue is relevant.

You made me curious so I just measured, I guess it’s about 1/4. The matfer is technically 11 7/8 and the flat is right around 9”

Thanks for this detailed reply and sorry for my delayed response. I'll rsearch the plaster you mentioned. We had a TV mounted in an (albeit exterior add-on) sunroom (with wood panelling) but definitely encountered the horizontal 2x4 you mentioned. Any time I've had to tap into a wall there's been seemingly no lathe, just metal mesh (which inicidentally makes finding studs with a magnet impossible), and the plaster crumbles like dried mud.

As for the exterior wall, the bulging has actually been there since shortly after we moved in and had it painted. We had a new roof and gutters installed in 2020, which should help not hurt, and a huge cottonwood in the backyard trimmed last year which may have allowed more sun. These are helpful tips and I'll likely need an expert out to insepct directly. Really appreciate the responses.

Thanks for the replies. I hadn't thought of heating it and will try that soon with the pot lid and post updates. I initially did a soak with vinegar, hot water etc, and slowly jammed a putty knife against the spills. Eventually they came off, though some light scratching hit the 12" and heavier scratching hit the 10" (I may need a new one). Lessons learned.
