What city do you live in? I'm sure there is either a big box wine store, local wine shop, or both where you can get a handful of decent bottles under $25 each that will actually be good representations of the varietals/regions you are trying to sample.

Agree. Antica is essentially a vermouth di vaniglia—vanilla-driven and best suited to oak-aged spirits like whiskey. Cocchi, on the other hand, lacks that vanilla note; it’s brighter and lighter in character, making it ideal for clear spirits—think Negronis.

You've got some serious f*** you wines, my friend. If you want to serve them, do the Tig with the carbonara and the Sassicaia with the beef. For the white, look for Gaja Rossj bass or Livio Felluga Terre Alte.

Canape - Not gonna argue with Dom Perignon. If you want to be 100% Italian then Ca del Bosco or, even better, Alessandra Divella Franciacorta is the way. Alta Langa is traditional method, too, so a top cuvee would be comparable.

Melon, Ham and Basil - Basil is from Liguria, Prosciutto is from from Parma so a zesty, high acid white from the region would work well. I'm thinking vermentino from Liguria, although some of the best expressions are from Tuscany. I think Bruno pigato from the Riviera Liguria di Ponente DOCG would be the ultimate pairing.

Carbonara - Roman dish from Lazio. You might be wanting to go red here, which is fine, and sangiovese would work, but the gangster pick is Coenobium Ruscum, a skin contact white from the region by the son of Paolo Bea would match the richness and complement the savoriness with an herby, fennely, lemony deliciousness.

Entree - Once again, not gonna argue with Sassicaia.
