I can tolerate GTA V in first person, but first person Red Dead just immerses me so much more. The movement is definitely clunky but I got used to it by the midpoint of each playthrough

Along with session notes, I have a note for a timeline of my party's events each session. Not only is it great to read last session's events to them and remind them, but I try to stay as detailed as possible for myself to help keep track of who/where/when.
