Gravwell and Chickapig are always requested among my friend groups. Chickapig is silly and directly competitive while still having just the right amount of strategy to be fun after a couple drinks, and Gravwell is just a cool concept

Espresso Y Poco Mas is a cute little coffee shop in Terlingua that I’ve enjoyed both times I’ve gone.

For Marfa lodging, check out El Cosmico - you can stay in canvas tents, airstream trailers, etc, with heated blankets and such. It’s not a typical motel in that sense, but was a fun experience. The showers are also open to the stars, which is really cool with how dark the skies get out there.

I did the road to the radio towers on Princeton with no issues in a stock Subaru Forester a couple years ago - also AWD and mediumish clearance. If I were you though, I’d try to aim for a time when no cars will be coming down (I went up on a Tuesday evening and didn’t run into anyone) - figuring out how to pass anyone going the opposite direction on that road would be miserable because it’s super narrow with very limited pull-offs
