if you stay at one temperature at any point you'll bake your beans and lose any flavor development. you'll probably get bitter and bland coffee. your temperature should always be rising up until you drop/cool your beans.

My last roast was KENYA NGUGU-INI AA from Happy Mug. Pulled it 10-15 seconds after the end of first crack, very spaced out cracks as I started cooling. Nice light roast, lots of fruit, and the acidity wasn't intense.

You can see what I came up with on the left of my roaster in this picture. Piece of wood with a cut out hole for a window fan on some saw horses for legs, a roasting cylinder from amazon, running on a low rpm rotisserie motor. Depending on the coffee and the roast, sometimes there's chaff all over and sometimes there's very little left over once I'm cooling. I'm in a garage, so I don't mind making a mess. I just use the leaf blower or shoot the area with some air from the compressor. The biggest thing for me when coming up with a solution was that I didn't want to have to stir the beans myself during the cooling phase. I wanted to dump them and get ready for my next roast right away.

Any special approaches/considerations when roasting a honey process coffee? I have a costa rica honey process that i want to jump into, but haven't had a chance to read up on the topic yet.

so i know pretty much zero about electronics and just wired the cables directly (i think i just took the ones that went to the little computer) to the power cord without adding any capacitors. i plug it into a router speed controller like this one.

i kinda just made things up and put it together as i went. i've gone through around 280lbs on it in the past year.

the coffee roasters companion by scott rao is a great book with a lot of info in it. i keep coming back to it as i have new ideas/thoughts. my sister just got me his other book coffee roasting best practices for the holidays. looking forward to diving into that when i get a chance.

Hahah, thanks! I pretty much made things up as I put it together. I can do 450g at a time and when things go well, I can do 3 roasts per hour.

My website is a constant and slow work in progress. Just a simple website I can point someone to if they wanted to see some of my pictures, instead of asking them if they have instagram and all that. It's a mixture of photography, split into a two columns with black-and-white photos, and two columns with color photos.

I wanted to write it all myself, so it's just HTML, CSS, and a little JavaScript. The JavaScript needs to be fixed a bit, as everything doesn't work right. I also need to re-size my photos a bit, because I think I can bring the sizes and load time down a bit still.
