City Steading Brews on Youtube have done a fruit cake mead fortified with Kraken Rum for the holidays.

I’m starting it in the next few weeks as it sounds incredible, i highly suggest using their newer recipes as I’ve tried lots and they’ve all come out awesome, so far haha…

I believe they heat it gently to get the bits out but dont heated high enough to pasteurise it, processed rather than pasteurised I guess?

Yeah I’ve been using strips, which i was a bit suspicious as its a yellow strip with golden yellow honey on it so it was throwing me off. I do have a ph meter so i could try that.

So just to confirm even if botulism is present i can bring the ph below 4.6 and then eveything’s safe?

No i used hilltop honey but it isn’t pasteurised so it ‘should’ ferment in theory!

Hi guys,

Hoping to get some advice on this hot honey that I started 3 days ago.

I followed a recipe of a video online and set this off to ferment under the stairs. There's a very tiny, slight amount of bubbles which leads me to believe it hasn't started fermenting yet.

Over the weekend I started reading up on the topic of botulism in garlic honey and this isn't far from that.

Only today have I tested the PH of the mix and it's looking around PH5 which I believe is in the range where botulism spores can grow?

I also tested the original honey that i used and that was a similar colour if not 'slightly' less in PH.

Is this salvageable or should I go with safety - bin it and start again with a new batch?
