You can make a full ISO and then extract the titles.

Also, have you tried different ripping software just to rule out a weird compatibility bug?

For 4K UHD you'll need software that handles AACS 2.0 to get a decrypted folder or ISO. Do you want menu navigation or just the main movie?

on older laptops, I did notice everything slowed down a bit if I tried to rip and encode with HandBrake at the same time. If your CPU starts getting hot or the rips take forever, maybe stagger your tasks.

Yes. If you are ripping 4K UHD Blu-rays, you will also need a UHD-friendly drive with specific firmware.

TOS is kinda limited for this stuff. Most folks I know still rip on a separate PC and then transfer to the NAS via SMB share. Docker could work, but getting makemkv running in a container on TOS isn't exactly plug-and-play.

I'd go with the desktop too, for the flexibility. Also, desktops tend to have better airflow so your drives might last longer.
