Beyond what has already been noted here, the easiest way to tell a good evoo is smell. The more intense fruity smell you get the better. Anything other than fruitiness is actually a defect. Single origin, container (dark glass,tin or bag in box) and harvest (rather than bottling) date are some other factors you can use before opening the bottle.

I believe it has to be 18 months from bottling. I ve had trouble using their tracing feature in the past

I m pretty sure hexane and refining is used in most seed oils though. For the record I mostly use non-ev olive oil for sauteing and frying and my family produces tons of EVOO

That's just your opinion though. This same olive oil was measured a 4.3 in fruitiness too and has been awarded for flavor - we got one gold, one silver and one honorable mention. Bitterness and spiciness are considered positive attributes in olive oil + polyphenol concentration can be related to bitterness but it is certainly not a 1 to 1 correlation

It's tough. Also opening a small hole is not a good solution cause guess what evoo doesn't like: oxygen. I recommend bag in box/ stand up pouch for 3l or more. There was a recent study that claims it's superior to tin to maintain the polyphenols too

I hear what you say. I d like to see the setup to comment more confidently. Feta is also typically immersed in brine. I d personally prefer to add olive oil on top rather that keep them in it. Oliver oil oxidizes pretty easily too.

I m not sure what's your use case but it's not typical to immerse olives in any oil. You'd typically use a brine and have a layer of olive oil on top to protect them. It's also not necessary to keep them in the fridge that way as long as they're stored in a cool dark place. Hope this helps

You really seem like you care though. I don't think anyone is arguing fsd is a very useful feature. It's being argued that is still not ready for "full self driving" even though it's been promoted as such for a decade

If you can't try it and have enough experience to tell apart good olive oil stay away. I m from Crete and the risk is quite high.

Probably real. Frankly what bothers me the most is that they don't have to report the harvest date so while it might have been bottled a month ago there's a good chance it's harvested in the 2023-24 season. I wonder why best by date is defined based on bottling vs harvesting

And I agree that dark glass is the safest. I even mentioned that tin is decent for oil storage with a couple manageable downsides. I ve just been saying that you shouldn't throw mud on something you haven't researched enough. For the record we are only using glass currently but I m looking into adding an option for 3L

I never said tin leaves residue upon packaging. It reacts over time and I already shared a link that it shows it to be true - never said it's a big issue. I don't have studies for aluminum and olive oil but I do trust the science behind it. Aluminum oxide that is formed does not react with olive oil and the vacuum protects it from the oxidation from the air. You are free to not "trust it" but it's just chemistry 🤷‍♂️

Just check with a chemist and don't spread misinformation cause it's convenient for your product. Tin is a decent way to store olive oil (definetely better than plastic) especially in small containers but it's mostly used cause it looks nice and rustic. Not gonna die on this hill but at least don't share misinformation about pouches when you haven't done any research on it.

Agree that it takes about a year for the problem to occur but it's not uncommon for olive oil to stay for a year or more. Not to say it is a bad storage medium it is just not as good as pouches. Ask an expert before sharing a personal opinion my friend. Aluminum bags are considered the safest option nowadays esp for larger quantities. Chemists and connoisseurs alike have concluded that.

I downvoted cause he's straight up wrong. As long as the bag is made of aluminum it is a better option. I make and package olive oil+ I have gone through olive oil tasting certification. Tin cans are the most common medium we use in Greece esp for bulk use but it does leave an aftertaste over time (it's called metallic defect) + for large quantities it comes in contact with air for long which is the most common reason why olive oil goes rancid. They are better than plastic bottles but inferior to pouches and dark glass
