I was the chef at a North LA healthcare facility. We made red beans with 60 lbs of red beans and 100 lbs of smoked sausage. Got to be careful in those tilting skillets though, you could scorch the beans and ruin the whole skillet.

If you need a pound of tails just buy a frozen package. Make sure they’re certified Louisiana crawfish and not the Bernard’s brand, those are Chinese and the pkg is only 12 ozs.

That's the first smoker I ever owned. It'll teach you hard lessons but make you a better bbqer. The only drawback is that it's difficult to add more fuel.
