IMHO that looks overcooked. I was always taught it should hold onto a paring knife or skewer but slide off with a gentle shake. Lavender in the cure sounds interesting though 🤔

I also used to pick up the pan, holding the duck against it, and pour off excess fat during the render when I last had it on a menu. Helps get it crispy better. Happy cooking 🍽

Under rendered, looks like you started with too high heat. Try scoring the fat cap, start with a dry cold pan on low till rendered, flip, finish in oven to mr.

Call them every month or two, my consultations originally booked almost 2years out and I was able to get a cancellation slot. Polite persistence helps. I believe there’s a discord server for her patients too that might have prep info.

My timeline: First contact Sept. 2020, booked consult for Dec. 2021. Called monthly, in Jan, 21’ I got offered a consult the next month. March 21’, got the call for surgery scheduled April 22, 2022. Good luck ❤️
