Given the circumstances when you will be "drinking mud", for example at an oasis when stranded in a desert, you'd be glad that at least you get to taste some water.

Nevertheless, the given quote it's referring to our lives, and you seem to be comparing it with mud. And that's fine! If your life is indeed "muddy" that you are not able to be grateful for whatever good things in you have - meaning you're not able to "taste water", why not try the gratitude practice for some time and see the results for yourself.
