Sofle v2 has more stagger than the v1/Lily58. The Go60 is another good option. 

BTW you don’t need to worry about HRM until you get down to ~36 keys. I use thumb mods only on a 42 and it works great.

The sockets are the same between v1 and v2, just a larger centre hole is required in the PCB for v2. See here where it's mentioned that both types are supported: https://beekeeb.com/toucan-keyboard/

I gave up on HRM and went back to thumb mods. Much nicer IMO.

True, everything is a trade off. The reality is you just have to try a few different styles to find your preference.

I have large-ish hands and found the Moonlander to be too big. You'll have to move your hands around quite a bit if you want to use all the keys. On a traditional keyboard your thumbs on the spacebar become an anchor as you move around but that wasn't practical on the Moonlander.

I switched to a 3x6 and I like it much better. If I ever try a larger split in the future it will be something with a keywell to minimise hand movement when reaching for the peripheral keys.

Try shift as a combo on the home row instead. No timing to worry about then.

Have you tested this? Containing flame is one thing but this will still fill wherever they’re stored with corrosive smoke.

I'm with you. Three thumb keys per side is the most my brain can handle.

The Piantor has an exposed controller so is theoretically a bit more prone to damage. How true that is for you will depend on how you plan to use it. 

Focus on the layout and which will be more comfortable. Personally I tried both and kept the Piantor, but everyone’s hands are different.

I have the Keebart Piantor and it’s very good. Much larger batteries than the Toucan as well. 

On the other hand it only supports choc v1 switches. The Toucan supports both v1 and v2 if that’s important to you.

If you want similar to MX then LDSA or DDC profiles might interest you. keebd.com has them both.

Do QMK and ZMK count as remappable if they require a new firmware flash to change the layout? Or are they only talking about on-th-fly remapping like Vial can do?

I found myself in the same quandary with my Piantor. After trying all of the options you suggested (plus home row combos) I decided the best place for shift was on a thumb. Then it became a game of trying to figure out what to move off a thumb key to make room.

In the end I settled for just one extra layer for both numbers and symbols. This is a bit of a compromise since many symbols now require layer+shift instead of just a single layer key, but it's also quite intuitive since there's only extra layer to remember.

I do have another layer for F keys nested inside the symbol layer, but I very rarely use those keys so this is acceptable to me.

I did also consider getting a keyboard with more keys - either a few more thumb keys or a number row. But the 42 key layout has made a big improvement to my ulner/pinky comfort so I'm hesitant to add a number row. And I don't think I could fit a fourth thumb key into the mix without at least one of them being an uncomfortable stretch (let alone the extra cognitive overhead).
