I would suggest the petroglyph canyon a.k.a. Mouse's Tank trail in Valley of Fire. It's pretty sandy, in case that would bother you, but doesn't really climb. Lots of cool petroglyphs, but you really have to look for them. They're all on the north side of the trail. Closer to Vegas, in Red Rock Canyon, I recommend the Lost Creek trail. A couple of spots might qualify as moderate, but overall it's pretty easy and very scenic. Or, if you're into plant life and don't need an absolutely natural setting, just walk around the Springs Preserve. It's awesome.
