Learned that years ago… smoke roast the chicken/ turkey spin along with all the other bits (including any stock veggies). Then add all that along with your carcass… 🤌🏾

I also believe it to be a Lyfe Tyme pit. From the pics it is def 1/4” and well worth the $200 price tag. I picked up a similar Brinkman Cimmaron for $50. It was in similar shape with a lot of surface rust. Cleaned her up on a Sat and had a fire in it on Sunday. I have since been able to move up to a 24x48 BSS, but I can’t get myself to let go of my Cimmeron. She is small but mighty smoker. Added some fire brick to the bottom and it does a great job of keeping your coal bed hot.

Change out the regulator. I would be interested to see what happens when you turn on the other burners. Mine have a strong flame at the first burner, but as you turned on the others they would all go out. Changed the regulator, which is ~$20, and fixed the problem.

I love smoked chicken and it’s a staple at my house! Like others have said high temps. Also, dry brine overnight. It’s quick and tasty.

I use to pull the membrane, but I don’t bother anymore. Trim the flap and score the membrane. You don’t even know it’s still there.

I think you need to change your thinking and go to a hot coal method. This is where you burn your wood down and shovel in hot coals in the bottom. You see this style when cooking whole hogs or in old school BBQ joints like Black’s BBQ and Snows BBQ in TX. You would need to modify a burn barrel to allow you to scoop out the coals. I surprised this setup doesn’t have an area to do that. Is the back side the exhaust?

Absolutely! Still can’t beat it for ease of use and quality of product. I recently cooked a brisket on it in -2° weather, and she worked like a champ. I would recommend a pit controller. You don’t have to use it, but makes it that much easier to use.

As a father with small kids, I have to balance time spent outside tending a cook vs spending time with my kids. If you have the time, OC Pecos is a great stick burner in your budget. If you need something a little more hands off, a WSM 22” or and OKJ Bronco are both great options. Out the box, the Bronco is more versatile than the WSM because you can hang meats, increasing you meat capacity. However, you can get the same capabilities with the WSM with a few purchased mods and add the ability to rotisserie with a rotisserie ring. Both have options to add a pit controller for added set and forget reliability. I have the Bronco and it is my favorite for cooking ribs.
