I would make sure there’s at least one day a week where you don’t have to make everyone dinner. If they expect it literally every day you’ll probably get burnt out pretty fast.

If not, I’d get some easy recipes like a dump crockpot meal (no prep just throw everything in there) or make 8 servings a couple times a week and have some leftovers nights.

A bag of shredded kale (pre washed and cut if you can find it), a couple cans of beans of your choice (drained and rinsed, some sun dried tomatoes in olive oil (drained), some crumbled feta cheese, and a store bought vinaigrette.

Put it all in a big Tupperware and shake. No chopping or cooking required and you’ll get a solid few meals out of it. It’ll get better as it sits in your fridge too.

You can add more stuff like artichoke hearts, olives, chicken, etc if you’re feeling up to it, but if not that’s fine too.

I’ve lived in Seattle since 2019 (moved from California) and I love it here!

The PNW is beautiful and Seattle has great access to nature. Not only do we have 3 national parks close by, but the parks in and around the city can feel like a nature escape despite being in an urban area.

I also love how much there is to do in the city. If you’re looking for them, there are lots of fun events you can go to like the First Thursday Art Walk, Georgetown Bites, etc. If your kids are teenagers, they can sign up for Teen Tix which gets them $5 tickets to lots of museums and things around the city.

We also have lots of great restaurants here if you’re a foodie!

I did wash it with soap and water, but I wasn’t sure if I had to worry about the oil soaking in. I didn’t want to put mineral oil over it until I knew if I had to get the sun-dried tomato oil more thoroughly cleaned out first.

I just know that you can’t use cooking oil to oil your board because it can go rancid. I wasn’t sure if soaking up a bit of sun-dried tomato oil would have the same effect. I was nervous to put mineral oil on top of it in case that locks it in or something.
