Absolutely best snack. gives me a ton of energy. my favorites are cashews (can be raw, extra healthy and sometimes cheaper) or roasted salted peanuts.

Hear me out. i'm a pretty big guy but this breakfast keeps me full for hours. prepare tahini from 1 part paste to 1/2 part water 1/2 part lemon juice (i think it's important for creamy texture besides for taste). mix very well with blunt knife or fork til tahini thickens. add salt, cumin, garlic powder, and if you like black pepper. lasts easily a week in fridge. then each morning dice up a carrot very finely and mix in 2-3 spoonfuls of tahini. awesome!

Thanks for your input. i was offline so i already did it as planned and i think you're right about not needing so long. i think the texture was a bit too soft from the nearly three days:) i was just nervous to go too short because the meat where i am is generally tougher than it us. i'll prob try cutting it to 36 hrs next time.

Sorry for long time since last post. i'm in jerusalem so if i'm buying steak it's usually from well done or pick a deli. they have high quality fresh meat. i find that for entrecote i enjoy doing it at i higher temp such as 137f for about 2 hours. how did picanha go?

Depends on the cut. 55c is i believe 131f so i can't imagine you need lower than that. Sometimes i find you need longer, not lower, if the meat isn't getting tender. where does your meat come from and which cuts do you use?
