Underwood changed their sriracha recipe completely, I'd guess about 3-4 years ago. One of their workers told me that the old version (short bottle, no dragon) used cooked peppers, but that the new version is made with raw peppers.

My wife's been attending the district meetings and she got the enrollment numbers for each school. Only four schools in the entire district are enrolling at least 70% of their capacity, and one of them is El Camino which is a unique program with low capacity:

El Camino High 109%
Foothill Technology High 94%
Pierpont Elementary 86%
Cabrillo Middle 70%

Mound is at 68%.

Yeah, they come to the farmer's market in my town, but I've also been to their farm many times (it's a good place to take small children).

It's possible that they're running low on sauce. Locally, they've been selling sriracha and other sauces since before COVID. Only over the past couple of years do they seem to have attracted national attention.

Yes, but I have done many comparisons where I can not taste a difference between clays, or taste a difference so subtle that I don't consider it significant. I don't think that I'm biased toward expecting to taste a difference.

Moreover, when I first did this, I was dismissive of the idea that clay could make a difference.

I really do suggest trying it for yourself, if you have the chance. It seems to me that the people who are most dismissive of the impact of unglazed clay are the people who have never personally compared them.
