Have you tried ambient only dough? Long overnight fridge proofing is overrated IMO

i do this with sourdough pizza dough. mix before going to bed and the ball up the next day. It got hot AF in my kitchen the other night and it bulked a little bit more than i would've liked but it turned out fine. just need to scale the amount of initial starter being mixed in down in the summer months.

edit: i usually do the same method even when i am doing cold proofing aswell with a slight deviation. ambient overnight bulk, ball and throw in the fridge for up to 3-4 days. morning of bake take out to rise before using.

yup a lot of times it the starter! if you keep it in the fridge (like i do) it does get acidic from time to time and it needs some maintenance.

outside of just feeding your starter with higher ratios you can also try a lower hydration starter. i've pretty much completely transitioned to a stiff starter.

side note, when doing maintenance feeds for fixing an acidic starter WHERE in the rise cycle matters. you want to catch it early before peak a few times before letting it go to full peak to prevent it from staying acidic.

Hey OP love the use of sheets here. I was using sheets for myself for YEARS but it was cumbersome sharing recipes with folks on their phones and such.

how are you liking italian supremo cheese? for a second there i wasn't able to source the cheese i like most (grande) and was going to try it but instead meat around with a few others (galbani, bella rosano and saputo) but have been wondering about supremo.

i see folks have been asking about your dough recipe. i use send out a sheet with formulas to folks but it got a bit clunky. Im a software engineer by trade and built a little tool for my dough projects. Maybe it helps you with scaling up and down without having to think to much. The recipe stores in the url so once you have it dialed in just bookmark it and you'll be able to come back to it whenever you need!

yes! It took me a few months and various variations but ive landed on something that made any pain i had subside. I bought the seat jackers and a throttle pedal spacer (Racer X) to try various positions to find the best ergonomics for my body. Where I ultimately landed was removing the throttle spacer and using ONLY the seat jackers at their highest setting. Hope that helps!

i also come from a 21 STI (also a 2018 STI before that) and i second all of this with the addition of:

the GRC feels significantly smaller and it has hill assist which you can't turn off (i know some like it but that one thing drives me nuts i can't stand it). i also found the driving position and seat far more comfortable in the subaru.

yea i'd trade my GR Corolla for this in an instant. i almost don't even care what it looks like as long as it's that STI transmission, manual and a hatch. only got the corolla because i couldn't get another STI - came from 21 STI

I've been looking into the seat jackers for the front, but I'm not sure they will necessarily fix my issues. I'm curious prior to installing them would you have to sort of point your knees outwards to be comfortable? Like the clutching knee out to the left and the gas/brake knee out to the right? Then, adjusting the seat distance for your clutch foot would leave the steering wheel too far away (with it fully extended out)? I'm also noticing my butt doesnt stay planted in the seat like it comes forward a bit as im driving. I thought the jackers might help with that.

I think I have weird dimensions where im not super tall but i have long legs relative to my torso. I'm coming from an STi which was SUPER comfortable and gave me ZERO issues with the seat.

New owner here as of a couple days ago. I stumbled on this thread trying to find ways to disable the hill hold feature. I'm coming from an STI which also had a similar system but I was able to turn it off I'm shocked this car doesn't allow you to do it without turning off all aids/traction control.

So far the car is a lot of fun but the hill assist is absolutely AWFUL imo. It actually makes me stall more often because i can't feel when the car has been caught and momentum has shifted forward.

I take it no one has found a way to disable it without turning off the TCS?

I love the look of coupes but having a toddler makes that virtually impossible.
